Foeder No. 108 is a 10,000 liter barrel from 1935, which comes from an old brewery, where the beers contain a lot of volatile acids. The Lambic of this foeder enriched the character of many Boon blends. The brew of April 27, 2016 was the very last production of this veteran and was bottled as Oude Geuze Boon VAT 108bis. In February 2019, Foeder No. 108 was taken out of production and disassembled. Boon stores the best staves in the warehouse to carry out repairs on other foeders. The Lambiek for Oude Geuze VAT 108bis matured on Foeder No. 108 for 2 years and 7 months. With a fermentation rate of 89%, the Geuze VAT 108bis has a nice acid balance. The aroma is similar to the earlier version VAT 108 that Boon released on the market in September 2017. The wine-like accents are combined with a clear “old beer” character, which ensures a firm and robust taste with unmistakable, but not overwhelming, volatile acids.
