A real Belgian vodka, distilled to 96% alcohol. While De Cort used to have to be satisfied with 85%, the last 10% is really important for a vodka. Excellent purity, no ‘off-flavors’, the purity of the raw material, the softness of the extremely slow distillation… and the passion. It’s all in the bottle. Manu De Cort first ferments local Pajottenland wheat, barley and rye. After boiling, cooling and fermenting, he distills this grain beer in a monumental Holstein still with retification column to obtain a spirit of about 60% alcohol. He then redistilled it in a smaller small still with the high column to 96% alcohol. After adding water, he lets the vodka rest for up to 6 months. The result is a soft, rich spirit. The purest form of a distillate. A vodka couldn’t be more Belgian. Local, short chain, craft and passion.
