The Brett House Janssens, Pajottegem

Pajottegem and Pajottinga are gueuze brands owned by Roel Janssens, the proprietor of café Paddenbroek in Gooik. He does not brew himself but has gueuze blended by other producers. Pajottegem is a blend created by Lambiek Fabriek from Sint-Pieters-Leeuw, while the Oude Gueuze Pajottinga is a blend crafted by Kloris Devillé of Den Herberg in Buizingen. In 2025, one year after his first gueuze was launched, Roel named his gueuze project “The Brett House Janssens.”
