Description
The Symbiosis is a blend of the oldest known fermentations, the fermentation of grains, honey and fruit. Spontaneous mead has been a long journey. Translating lambic into honey wine presents challenges.
When carefully blending Symbiose, starting with blending the barrel-aged mead with lambic, aroma and structure are created. Pajotse cider is then added week after week until they form a beautiful whole. This is a unique Boerenerf product. The wine character is interwoven with notes of honey and barrel, a stable lambic body with the appropriate, fresh acidity of the cider.
