Een echte Belgische vodka, gedistilleerd tot 96% alcohol. Terwijl De Cort zich vroeger tevreden moest stellen met 85% is die laatste 10% echt van belang voor een vodka. Uitmuntende zuiverheid, weg met de ‘off-flavors’, de puurheid van de grondstof, de zachtheid van de uiterst langzame distillatie… en de passie. Het zit allemaal in de fles. Manu De Cort laat eerst Pepingse tarwe, gerst en rogge fermenteren. Na het koken, afkoelen en fermenteren distilleert hij dit granenbier in een monumentale Holstein-ketel met retificeerkolom om tot een spirit van ongeveer 60% alcohol te komen. Vervolgens herdistilleert hij het in een kleinere kleine ketel met de hoge kolom tot 96% alcohol. Na toevoeging van water laat hij de vodka tot 6 maanden rusten. Het resultaat is een zachte, rijke spirit. De meest pure vorm van een distillaat. Belgischer kan een vodka niet zijn. Lokaal, korte keten, ambacht en passie.

Excellente pureté, pas de ‘off-flavors’, la pureté de la matière première, la douceur de la distillation extrêmement lente… et la passion. Tout est dans la bouteille. Manu De Cort fermente d’abord du blé, de l’orge et du seigle. Après ébullition, refroidissement et fermentation, il distille cette bière de grain dans un alambic Holstein monumental avec colonne de rétification pour obtenir un spiritueux d’environ 60% d’alcool. Il l’a ensuite redistillé dans un petit alambic plus petit avec la colonne haute à 96% d’alcool. Après avoir ajouté de l’eau, il laisse reposer la vodka jusqu’à 6 mois. Le résultat est un esprit doux et riche. La forme la plus pure d’un distillat. Une vodka on ne peut plus belge. Local, chaîne courte, artisanat et passion.
